The BÄKO Spring Fair – the BÄKO highlight of the year – took place on 15 and 16 April 2018 in Linz / Austria. BÄKO is a purchasing cooperative for bakers and confectioners in Austria. On two days approx. 1,200 interested visitors attended the fair with over 70 exhibitors from Austria and the neighbouring EU countries. Knollmühle participated with PANATURA for the first time.
Ciabatta bread made based on PANATURA with a bulk water addition of 90% and extremely large-pored crumb was a strong crowd-puller!
With a total production time of less than 4 h, the trade fair hit was able to convince bakers about the strengths of PANATURA. In addition to Ciabatta various bread rolls were presented such as Kaiser Rolls, Poppy seed Rolls and Pretzel sticks. Furthermore also sweet yeast pastries were presented. So Knoll Mühle was able to demonstrate the wide range of use of PANATURA sourdough.
The multiple live shows by the Knollmühle bakery team showed the visitors the application and the results with PANATURA right up close.
